Etsiz Çiğ Köfte / Turkish Meatless Raw kofte "meatball"

Selam.....Merhaba from Turkey.

Merhaba..... Have you been to Turkey before?
Turkey, where you can indulge your eyes with countless beautiful and historical places and scenes. And the place which satisfy your taste with dozens of shockingly delicious street foods.
Many of my previous post of Turkish food are street food with homemade style cause İ love experiment and taste new flavor of Turkish street food then try to copy for cooking at home.
But of course İ love to learn basic and traditional Turkish food that local women serve for their family as well.
And my post today is Etsiz Çiğ Köfte, literally means meatless raw "meatball". İt's no meat version of Çiğ Köfte (read; chee kuf-te),  one of Turkey's favorite fast food/ street food. The raw meat (non fat) mixed and knead with fine grain bulgur and many kind of baharat / spices. Çiğ Köfte traditionally shaped in small long balls serve with many fresh vegetables, cucumber pickle and chili pepper pickle, with adding of sour pomegranate molasses (nar eksisi) and lemon juice. Some love to enjoy with lavash (flat bread) while other just wrap it with lettuce.

KUE KERİNG KACANG / INDONESİAN PEANUT COOKİES

Resep dalam bhs İndonesia ada di bagian bawah

Selam everybody....Merhaba from Turkey.

This Peanut cookie is one from many other İndonesian old traditional cookies. İ grew up with these cookies. İ remember had this cookies every Eid Fitr holiday when my late grandmother or my family took me and siblings visited some relatives and family's friend.
At that time (around 1980's) we still could find this peanut cookies easily, at least every Eid Fitr or Christmas holiday. Until İ think around middle 1990's it became less popular among other classic cookies (kaastengels, nastar, butter cookies, etc).

Even it became less popular compare to other classic and modern cookies, still some small stall sold this peanut cookies until İ didn't remember exactly when it became less and less to find especially in big cities.

İ left my homeland Surabaya around year 2000 and started my new academic career at Jakarta and since then İ never ate or saw that cookies anymore until now year 2017 😢
But İ still remember exactly how it taste and İ miss it now.

Mantis Shrimp Curry Noodle made from scratch / Mie Kari (kare) udang ronggeng

Resep dalam Bhs İndonesia ada di bagian bawah.

Selam everybody.....Merhaba from Turkey.

This is my kind of comfort food. Nothing more indulge and fulfill my longing of my mom's cook than this hearty, warming and rich flavor of this curry noodle. This bowl always my number one choice whenever İ want to be "selfish" in my dinner table 😏
Selfish.... yes cause my husband doesn't like this kind of curry. He prefer simple food with "simple" flavor 😔

Whenever İ want to cook curry..İ always remember my mom. She is the best cooks around the house. İ learnt many foods from her. We (me and my siblings) all grew up with my mom's heavenly yummy food. İ Love and always remember her curries especially crab and seafood curry.
And my curry noodle also inspired by my mom's curry style. Traditionally we eat curry with white steamed rice. But today İ like to combine my mom's style curry with another İndonesian staple; Mie or Noodle

Hazelnut Macarons With Nutella Filling

Selam everybody.....Merhaba from Turkey.

İt has been for a while İ didn't post any macarons recipe since my last "Rose Macarons with Rose Raspberry buttercream filling" İ didn't post any macarons not because İ didn't bake one, in fact İ start receive some macarons order since few months ago.

İt happen unexpectedly after one staff of baking distributor where İ usually buying my baking ingredient asked my phone number. She said some people who came to their store often ask her how to make macarons or are they selling one. Yes İ know they don't sell any macarons but some wonderfully delish chocolate. She asked me some questions whether İ can receive some order for macarons so she can give my contact to their customer as well.....

Well....İt was just starting like that. İ was so..so..so exciting (almost nervous) when İ got my 1st call for the macarons 😄

Actually İ received pre order for making some food or cakes with personal touch. Just like this Flower Bouquet cup cake, some one ordered it for her special friends. Or yummy black Forrest cake for anniversary someones special to their anniversary. Just check my "CAKE GALERY" section to see some of my collection. Sorry if İ didn't update picture with new one.

Anyway..... Let's back to my post today. Yep....Another macarons! But wait, this time is different one. İ use hazelnut meal instead of almond meal which İ usually use. No reason, almond meal getting expensive now on my local.. more expensive than pistachio (medium grade. Higher grade pistachio still more expensive) or hazelnut. So this is one of my reason to try hazelnut meal for my macarons. Actually trying hazelnut meal for macarons already on my waiting list since long time ago and now İ think the right time to give a shoot.

İf you are pistachio lover you can see my last post Pistachio Macarons in this link. İ should bake another pistachio macarons soon as well 😊 .

Lontong Mie Surabaya / Surabaya style bean sprout noodle stew

Resep dalam bhs İndonesia ada di bagian bawah.

Selam everybody.....Merhaba from Turkey.

My today today post is another Surabaya-nese ( if İ may say so for things from Surabaya 😊 )

Surabaya is capital city of East Java province and it's my homeland. A second largest city in population after Jakarta.

And as other region / city in İndonesia Surabaya also famous with richness of it's own typical cuisine. Talking about Surabaya food is like holding very long of shopping list that you want and you need them all! Surabaya foods are rich and full of flavor distinguish from other cuisine from other İndonesian city/ region.
And one of typical ingredients from Surabaya (and neighboring towns) is "petis". Petis is product ingredient made of shrimp in paste form. Some call it shrimp paste but İ call it just "petis" so not being confuse with "terasi" or "belacan" (another shrimp product). Below here you can see the different between "petis" and "terasi/belacan".
But both shrimp products are staple ingredients in most İndonesian cuisines. İ brought them from İndonesia last year during my family visit.

Roll Cake with nutella filling / Bolu gulung irit telur

Resep dalam Bhs İndonesia ada di bagian bawah

Selam everybody.....Merhaba from Turkey.

İt had been a while İ didn't post any roll cake since my last Zebra pattern roll cake with cooked dough method few months ago. No reason why, İ am just not "in a mood" baking one.  Until my husband asked me in  one rainy Sunday why there is no any cake to enjoy with our tea. İ answered and gave him a jar of cookies but he went; would be nice if there is a cake.

No...no rolling eyes really 😤. İ am glad he missed my cake and İ miss making one as well. İ was going to make butter bundt cake but İ feel İ want to eat light. So İ decided to make roll  instead. İ don't have any jam left in my refrigerator and making buttercream would take another effort. So My roll cake this time just use nutella as filling.
İf you want to try this roll cake as well you can vary the filling as your taste or anything available on yours. Check my other roll cake at Swiss Roll Cake category.

Turkish Spice Roasted Chicken Wings/ Fırında Kızarmış Tavuk Kanat

Selam everybody......Merhaba from Turkey.

Question of the day; what chicken part is your favorite?

Telling you honestly..... I love chicken feet. İ know..İ know.. some of you maybe will stick your tongue out 😝 😝 . İt sound gross for some of you. Cause maybe you never eat that or even think to eat it. But believe me it's good! Mostly İndonesian and some Asian countries eat chicken feet.
Chicken feet rich of glucosamine chondroitin, collagen and trace minerals. Moreover, a chicken feet stock is an excellent source of calcium

Sadly İ can not find any chicken feet in Turkey from any butcher here so İ won't talk more about it and İ should wait until İ get home to İndonesia soon 😊

Second list of my fave chicken part of course wings! Who doesn't love wings.
The yummiest chicken part and every body's favorite snack however people cook it or whatever glazing sauce with it.

My daughter is very much picky on food and doesn't eat too much, but whenever there is chicken wings she could eat them more as İ thought. So almost once in few days İ cook chicken wing just for her.
Sometimes İ made her crunchy chicken wing and she loves to dip it in cheese sauce. Or simple Honey garlic chicken wings. But most of her fave is this Fırında Kızarmış Tavuk kanat literally mean oven roasted chicken wings.

This chicken wing is actually my copycat taste from rotisserie chicken wing seller here in city where İ live (or maybe other cities in Turkey). And make them at home is satisfy me not just in fresh taste but also much saving in budget.
By making it at home we can control the freshness of chicken wings we use, of course.
