Mantı (letter "ı" read it like you read "e" in butter). 
It is a dumpling type made by cutting the thinly rolled dough into small rectangles, then filling it with ground meat inside, then folding it into the form of a bundle, and boiling it like pasta in water. There are two ways to cook this Mantı, either you can cook in plain boiling water or you can cook them in tomato sauce.
But mostly it is eaten by pouring garlic yogurt sauce, butter, and sauce on it.

Viral Recipe. KOREAN CREAM CHEESE GARLIC BREAD  (육쪽마늘빵). With video. | Çitra's Home Diary.

This bread is amazingly gone viral across the internet, especially on Instagram.
After "dalgona" coffee, now another viral dish from South Korean, it's Korean cream cheese garlic bread (육쪽마늘빵). It is one of-you can say-Hasselback bread but in Asian style.

Never think that this garlic bread is the same as European-style garlic bread. This Korean-style is absolutely different. Korean garlic bread has a soft and creamy texture while European garlic bread has a crispy-chewy texture with a savory palate.
With slightly sweet savory with cream cheese filling, this Korean style garlic bread is favorite street food in Korea.

Some sources say this famous bread originated from Gangneung City in Gangwon Province. This food was actually a Korean street food.
Pain Famille's bakery makes garlic-like loaves of six cloves, also known as six-sided garlic. There are also those who slice transversely like sausages using rather long bread. But what is popular today is round bread with star-shaped slices.

During this time, we can find many variants of these noodles. For example, vermicelli (rice noodles) can be found in many colors and flavors. Or egg noodles, we can enrich it with so many flavors and adding colors.

Turkish (flat bread) Ramadan Pide with #poolish method / Ramazan Pidesi (poolish ön mayası) | Çitra's Home Diary

Ramadan pide, is one of the Ramadan staples here in Turkey. It's a traditional soft-leavened Turkish bread. Round or oval and rather flat in form, and having a weave-like patterned crust, Ramazan pidesi is made of wheat flour with yeast and topped with egg glaze and sesame and or nigella sativa seeds.
It is traditionally served for the iftar and sahur meals during the holy month of Ramadan.


With Ramadan starting, everyone is waiting for the moment they get a hot Ramadan pide for iftar (fast-breaking meal) and put butter on it or dip into a hot soup (çorba). Enjoying the enchanting smell before eating the whole piece in a second. 

And seeing a long queue in front of fırın/ public bakery before iftar time to get this delicious flatbread fresh from the oven is a common view. But since the COVID-19 pandemic, people hesitate to go out and no crowd being allowed.
Most public bakery already produces this pide bread before 6 PM and are already wrapped up waiting for people to buy or they will distribute to the neighborhood. 


Baking bread at home has also become more popular these days. During the pandemic, people tend to cook or make anything at home including baking bread.
But for me, baking bread it's not about a trend. I love baking my own bread cause my husband loves to eat homemade bread.

The most favorite pasta type is spaghetti. 

Most pasta consumption in Turkey is in Marmara Region, Aegean second, took third place is Central Anatolia. This was followed by the Mediterranean, Black Sea, Southeast and Eastern Anatolia Regions. It was seen that pasta consumption was lower in the regions where local dishes and traditional tastes were in the foreground.

Baking bread is an almost daily routine for me. Any kind of bread, Asian style soft bread until artisan European style bread with chewy texture cause my husband is a bread eater. 
My kid, she enjoys everything. She can enjoy food from my culture as much as she likes Turkish food.
Me as Asian, mostly consume rice or noodle but of course, I can not resist hearty warm delicious soup with warm bread in chill days 😍

And since she started school a few years ago, baking burger bun is become my routine for her lunch box or sometimes for the fathers too.
And just today I want to share also with you since I have documented in pictures this time. This recipe I use for few years already and it works for me and turns into nice beautiful buns just like storebought.

For you who never bake bread or bun before this recipe might be very easy for you to start. Here I make my own burger rings to get nice shape when it bakes but of course it's optional for you. İf you bake your own buns very often this ring pretty much help. You can get it ready at baking store but I prefer make them by my self.

Roti Jala / Malay net pancake recipe

Roti Jala (also known as Roti Kirai or Roti Renjis), literally meaning Net Bread is a pretty dish that looks like a lace doily due to the way it is made.
In Indonesia this dish derived from the North Sumatra. Since geographically it closes to Malaysia so many Malay influence on that province including culture and culinary.



Roti jala usually is served alongside with curry dish/ curry sauce. In Deli  (Deli Serdang Regency) they serve it with famed lamb curry together with pickled pineapple.

According to the humanist M Muhar Omtatok, roti jala or net pancake is Malay food which could have been adapted from Indian element.
Roti jala also found in Riau Islands known as roti kirai.


And that's my friend what I am going to share today on my blog. Yes, Indonesian culinary is very rich and colorful due to we have many ethnic groups (more than 300) living from east to west Indonesian archipelago.
Indonesian cuisine varies greatly by region and has many different influences.

I made this roti jala to serve with my chicken curry, you can check my recipe here. But sometime I eat roti jala with different dipping sauce. Make slightly sweet version to go with your fruits jam or chocolate sauce, that's another ideas to enjoy roti jala.

Flaky Pie Crust - basic dough

Spring is coming. And I love farmer market at spring. Berries! of course some other lovely fruits as well, but berries is most favorite for me.
And it means I'm gonna make some pies these weeks. Yup.. light, healthy and yummy dessert. 

That's why today I make some flaky pie crust in ahead. I use all butter and no shortening for my pie crust because it's very hard to find shortening in local market. If you want to mix this recipe with shortening, use 50:50 of butter and shortening.


Make sure to use good quality of butter cause it really affect the taste and the smell. I use traditional homemade butter for my recipe--just like I always did. It's very much satisfied me. I bought my butter from local farmer market in my neighborhood.

Unlike from my previous pie crust, today i make it manually, no food processor. I just want to taste the different of using processing and manual way.

Are you "facebookholic"? ... Sorry for my term. I mean do you often read the news story on  front wall shared by your facebook friends and all of sudden you find your self on somewhere inside cyberspace....It is fun, but sometimes we forgot how long we've been there ... oh..no..no..no..If already at that stage where we forget the time ... stop it. Off-connect and re-connect with the real world.



A few days ago, I accidentally read a news feed Shared by a friend on FB about dangers of preservatives in food-which is impossible may not be used in the fast food industry or frozen food. yeahhh... of course in their advertisement they will not mentioned or even denied it.. Do you believe that?

Imagine if (even) small amount of substance x we ​​consumed continuously year after year ... Imagine also if our young children began to consume it at their early age.....

To be frankly, before marriage and life as a single, away from my family, ready meals and frozen nearly my every day menu. At that time, of course I am aware of the dangers of the materials x, y, z which might be in these foods, not to mention the quality of the ingredients used, whether fresh or good condition and so on. What to do, I live alone, cooking was a big effort for me ... maybe you understand what I mean.

But after getting married ... I changed completely. Not only health reasons I mentioned above, also is more economical, and there's "romantic bonding" when my husband and I ate my cooking or his cooking ...or sometimes we cook together at the weekend ... And when my child comes in our life, giving her the best in all things is our obsession-including her meals.

Anywwaaaayyy.... with homemade meal, you can control the ingredients you use.. quality and price... And heyy.. homemade is cheaper!


My today's post  is homemade Chicken nuggets. I mix vegetables too in this chicken nuggets...you know I always try to "hide" vegetables in my kid's meal as much as I can...

Homemade pumpkin Puree

Today I'll share my homemade pumpkin puree. Maybe because pumpkin pie or anything using pumpkin puree is not popular dessert/dish here in Turkey, canned pumpkin puree is not something easily to find here. 
So this makes an advantages for me living here, I can learn making anything from scratch. Just like I make my Indonesian food e.g tofu and tempeh and many other more--things I never made before in my life when I was living in my homeland!

So here I am today make my own pumpkin puree. I found pumpkin is in season this fall.... since I live in Turkey I learnt about what fruits, vegetables or fish available on farmer market base on it's season. I made a list here too.

Living in four season country adjust me on some new skills and knowledge.. of course I enjoy it as much as I love living in my own homeland. While something in season here the price is cheap so I learnt to store things in season now and keep in my freezer--but of course with certain long life for consuming.
Just like this pumpkin now. I make them puree and store in my freezer so I have ready use pumpkin puree anytime I need it.

My today's post is pie basic dough. I'm planning to make a pie for dessert this weekend.. I still have no idea what kind a pie I will make but surely a pie for this weekend dessert (^,^) ... long time though I didn't make any pie..

So I prepare to make this pie dough... anytime I I want to make a pie it'll just ready to go. I want flaky pie dough. And since it's very difficult to find shortening here in Turkey, so I googling recipe use whole butter, no shortening... Then I found this recipe on Smitten Kitchen...

Garlic Butter Pizza Bread Stick

Happy Saturday. May you have a great weekend with your family and everybody you love. 

Since having a growing child in our house, I start a little bit busy making "schedule" to provide her snack or food start from breakfast till dinner. I think you are too when you have one like me :)

I never want my kid to eat any store bought snack-- try not too much though. That's why I regularly make something for her. Some food which I can make a head and can be stored in freezer. I think making our own snack (food) is more healthy-- that's my 1st concern about food for my kid. And other reason is maybe more economical in budget :)

Well, talking about snack today I want to share one of our fave one. It's surprisingly become new favorite in our house, not only by my kid, but also for her baba :)
Try it, maybe it'll become most request also in your house :)

You can use any pizza dough recipe you have--or you can browse my other pizza dough recipe in Basic dough label. Or you can use recipe below..it's just incredibly easy and fun for cooking project with your little one too. :) 


Make about 23 sticks

Ingredients:
For Basic Pizza Dough:
  • 1 cup warm milk (or water)
  • 1 tsp instant yeast
  • 1 Tbsp glucose / honey / sugar ( I use honey)
  • 340 gr all purpose flour 
  • 1 tsp table salt
  • 1 Tbsp olive oil other vegetable oil

For topping:
  • 3 cloves of Garlic. finely grated/ chopped
  • 100 gr salted butter, room temperature. (if you use unsalted butter, add pinch of salt, or no need more salt if you have strong salty cheese)
  • 2 tsp sweet paprika powder 
  • 1 Tbsp dried thyme
  • 1 Tbsp dried basil

>>Mix all until well blended. Divide it into 2 equal parts. Set a side

Yes, I make my own bread to served daily for my family...even mostly I still eat rice more than I eat bread because my stubborn Asian stomach still can not fully adaptable with just eat bread in one whole day :).

And today I want to share another bread recipe. Our family's fave sandwich white bread.

Corn flour Bread---My other "Bread adventure" @(^_^)@

Hahahahaha... maybe you think: another bread??!! Yes, why not? I'm not done explore my "bread adventure"...It's fun though... and maybe you will see other bread post on my page later on. Nothing better than warm homemade bread in your breakfast, isn't it?
 There is a strange feeling which I can not explain when my whole house smell with baking bread -- especially for my hubby, he said smells like this always reminded him of his childhood.... @(^_^)@

Yield: 2 medium loafs
Ingredients:
• 3 cup all purpose flour
• 1 tsp instant yeast 
• 1 ¼ tablespoon granulated sugar
• 1 ¼ dessert spoon salt
• 1 ½ cup warm water
• Enough corn flour/ corn meal

1) Mix 3 cup all purpose flour and salt in large bowl, set a side. Dissolve and stir sugar plus yeast in 1 ½ cups warm water, let stand ± 5 minutes. Mix into the flour + salt, stir with wooden spoon until well blended. Cover with plastic wrap / paper towels and let stand in warm place until foamy and fluffy at least 2 hours (or keep in refrig over night).
2) Sprinkle work surface with a lot of corn flour/ corn meal. Move the dough onto the work table sprinkled with cornmeal. Fold the dough a few times toward it self. Cover again with plastic wrap / towel and let it rest ± 20 minutes.
3) Divide the dough into two equal parts with sharp knife (wet the knife with water to prevent sticking). Prepare two oval pan (or whatever you have),basting with vegetable oil or Cover with baking paper. Place each dough into the pan, cover with plastic wrap / towel and let stand about 180 mnts (up to 2 hours).
4) Preheat oven at 250 ⁰C (maximum heat) at least 30 mnts previously. Bake about 45 minutes until the bread golden brown in color. And when you tapped it surface, it'll sound like hollow 



Cool on rack until room temperature before being cut.

Enjoy your warm homemade bread.

Semolina No Knead Bread (improved)

After quite successful with my first no-knead bread, this is my second attempt to make another one. I slightly modified the first recipe. And here it is the result..... Voaalllaa... with large "cracking" on its surface make this bread even more pretty than my first attempt.
In my previous recipe, I put lid when baked in the oven, this time, I let it bake without a lid... If you use upside and downside heat source oven (like mine), just notice it, when you should use only down the heat or use both heats.
As you can see here the bread perfectly "distended" and fluffy ... and it is so tasty! When I split it I can hear "cracking crisp" sounds very crunchy ... This bread couldn't survive for our lunchtime .... @(*_*)@

 3 cup all-purpose flour, more for dusting
 1 tablespoon granulated sugar
 ½ tsp active yeast
 2
½ tsp fine salt
 1 ½ cups warm water
 4 to 6 tablespoons semolina
 Dried Sunflower seeds (optional)

Method:

1) Sift and mix together flour and salt in large enough containers. Dissolve yeast and sugar in 1½ cups warm water. Pour into the flour, using a spatula or wooden spoon mix to mix them well. Cover with plastic stretch and let stand in a warm place for ± 15hours (see figure I and II)
Note: Make the dough in the evening if you want to process it in the morning the next day.

2) Dust your working surface with lots of flour, also your hands to prevent sticking, move the dough onto the working table, fold few times toward itself. Cover with plastic stretch and rest again for about 15 minutes in a warm place.

3) Take one wide medium pan, sprinkle with semolina, and sunflower seeds. Dust again your hands with flour, move the dough into that pan (see figure III). Cover with napkin/kitchen towel or plastic stretch and let stand for 60 ~ 180 minutes (figure IV).

4) 30 minutes before baking time, preheat your oven at 250 ⁰C (maximum heat), put enamel pan or pyrex (size 8 "~ 9 ½") in the oven during preheating. Carefully move the dough from a wide pan into enamel pot/ pyrex and bake for 30 ~ 45 minutes until golden brown on the surface and it'll sound hollow when you tapped it.

Cool on racks at least 15 minutes before slicing/ serving .

Pita Bread

Pita bread is a round pocket bread widely consumed in many Middle Eastern, Mediterranean, and Balkan cuisines. It is prevalent from the Balkans through Turkey, the Levant and the Arabian Peninsula. The "pocket" in pita bread is created by steam, which puffs up the dough. As the bread cools and flattens, a pocket is left in the middle.
Originated in the Middle East and were traditionally cooked in tandoor ovens.  



Yield 8 ~ 10 breads.
