Apple Pie, fall delicious dessert that everyone should bake.

This hearty and humble apple pie wouldn't be simple anymore with flush a lot of salted caramel sauce.-who doesn't love caramel sauce?

Serve it with clotted cream or vanilla ice cream ..You gonna ask for more! 💛

İ love to make my apple pie in individual version so İt's easy for me to keep the rest in an airtight container.

And with mini version make me easier to put it my kid's or my hubby's lunch box.

Or just fill our picnic box for a freshly weekend picnic before the air turns completely freeze.

Just an impressive mini version! 

The crust is totally yummy! flaky and all butter type pie crust İ still couldn't move on to another recipe. 

The pie shell İ use is my favorite recipe still. You can check the pie crust recipe here in this link. İ made the crust a night before İ bake my pie. 

Feel free to use your own favorite pie crust, but take my word... you should try my flaky crust, it's worth to make and you gonna love it.

We love pie especially fruit pie as dessert and tea time. And this mini apple pie is the best apple pie for our tea time. Serve individually with vanilla ice cream or simple whipped cream then flush with the syrup from the filling...hmmm...just heavenly yummy.


 For pie shells
  • 125 gr cold butter, cut into small chunks
  • 180 gr all purpose flour
  • 1 tbsp sugar
  • pinch of salt
  • 1 tsp almond essence 
  • 75~85 very cold water

İ love apple.. specially green one..there's sour a bit sweet in it. Back few years ago.. İ remember İ ate green apple almost everyday before İ eat anything in my breakfast time. That's why there was always apples stock in my fridge. Nowadays İ still love to eat apple but if it's not season you hardly find any apple here... there is, but with triple or four time more expensive than when it's season.

Oliebollen recipe (Dutch Donuts)

Oliebollen is a fried food-similiar to donut flavor containing raisins and apple slices, originally from Dutch. Oliebollen also known in Indonesia and are often listed in an old book recipe cause it's very popular also in Indonesia as one of Dutch food's heritage . In Netherlands, this food is traditionally eaten on New Year's Eve (But I love them in my breakfast with my hot Tukish tea). 

Oliebollen made ​​by frying dough in hot oil until lightly browned. Dough made ​​from flour, eggs, yeast, salt, and milk. The dough is left for about 1 hour and fried, then dusted with powdered sugar.

Oliebollen recipe (Dutch Donuts) | Çitra's Home Diary

Makes ± 35 ~ 40 small balls

Ingredients:
 500 g all-purpose flour
 2 medium egg, lightly beaten
 200 ml (1 cup) warm milk
 200 ml (1 cup) warm water
 11 g (1 packet) instant yeast
 50 g (± 2 tbsp) 
+ 1 tsp granulated sugar 
 1 tsp salt
 1 tsp vanilla powder
 2 pieces (± 250 g) medium apples, peeled, cut into 1x1 cm cubes, drizzle with lemon juice
 75 g (± ¾ cup raisins), soak in warm water a few hours earlier, drained
 50 ounces dried apricots (optional), chopped coarse
 Icing sugar for dusting
 Cooking oil for deep fry

Ordinary Apple pie using Puff Pastry


Puff Pastry... So love it , crispy and unique dough with dozens of layers make it so beautiful......
As 'choux' pastry, this puff pastry also allows us to have more fun by vary them with as many kind of fruits, vegetables, jams, sausages, meat, cheese, and other more your favorite topping and filling. 

From my Puff Pastry basic dough II last time, I made this apple pastry. I tell you, after you have basic dough of puff pastry in your refrig, you will have fun with it @(^_^)@ ... or I'm the only one who like to play with my dough..hehehhe..
For any pastry, I prefer making dough homemade rather than buy ready one. I don't know, for me homemade always better.

Maybe this apple pastry isn't the best good looking apple pastry you ever seen. But the taste is superb for me and my husband d(^_^)b. 
We bough many-like tons-of green apple from farmer market last week cause they were very cheap. So I made some of them for these apple pastry.. Just really comfort us during chill days lately with our hot evening Turkish tea.
Ingredients:
- 1/2 basic puff pastry dough II. Recipes can be found here. Thaw. Or you can use store bought
- 1 kg green apple. Peel and slice thinly crescent.
- 1/2 cup brown sugar
- 1/4 cup caster sugar
- 1 tablespoon ground cinnamon
- 1 cup raisins
- 1 egg yolk +3 tablespoons of milk, beaten and mix well for spread.

Rujak Apel dan prem Serut (Indonesian apple and plum shredded salad)

One of many other traditional Indonesian food. "Rujak Serut" or shredded spicy fruit salad. Usually made from  mixture of various fruits are grated and given palm sugar and tamarind as sauce. Mostly added chili to give hot spicy taste. Really nice enjoyed while it's cold. 
But this time I try another mix fruits variation, the green apples and green plums, both have a distinctive sour taste. No less tasty and fresh than other fruits combination.


İngresients and how to make:
- 2 large green apples. roughly Shredded
- 200 gr of green plums. roughly Shredded


sugar sauce:
- 250 gr palm sugar
-  tamarind paste 2 tsp
- Pinch of salt
- Enough water.
- birdeye chillies to taste

ground birdeye chıllies and puree with salt and tamarind. Add palm sugar and small amount of water, no need too thin, just thick enough to make sauce.
Combine sauce with apples and plums that have been shredded before. Store in refrigerator before serving.

Nastar isi Apel / Apple tart cookie

"Lebaran" (Iedul Fitr Feast) this year I spent in Turkey with husband .. It feels so nostalgic feel the atmosphere of  Iedul Fitr Feast a la Indonesia .. Many kind of cookies, "ketupat"(*) eat with Indonesian traditional food (sayur santan), homemade syrup, together with family in Indonesia ....

In Turkey, every Iedul Fitr feast (Ramazan bayram) there always been "baklava"  serve at every house in Turkey ... Unlike in Turkey, "lebaran" feast in Indonesia feel it is incomplete without cookies and other snack, also "ketupat" as the main dish at every homes in Indonesia ... Ooohh ..how I miss Indonesian "ketupat" ....

Trying to ease a little bit homesick at Iedul Fitr feast, I made some traditional "lebaran" cookies also, like this one: "NASTAR" . Nastar is cookies fill usually with homemade pineapple jam, but since I hardly ever to find pineapple this summer -unlucky me :( , so I made it with homemade apple jam.. not bad as well, indeed can be as variation of 'new' nastar after all  d(^_^)b

Mini Apple Pie (Elmalı mini turta)






Ingredient:
apple filling ingredients:
-500 gr green apple ( or 4 medium apples).cut small cube/ chopped finely
-6 table spoon sugar
-1 tea spoon cinnamon
- 50 gr raisin
- 1/2 glass of water


mix and cook at low-medium heat all ingredients above until apple get soft and thickened.


pie shell ingredients:

  • 165 g Flour
  • 1 egg yolk
  • 40 g  sugar powder
  • 70 g butter



Method:

1 mix together ingredients, stirring with a pastry knife until the flour looks grained beads. Rest for 15 minutes and lid with the plastic.
2. Roll the dough within 1 / 2 cm thick, and lied on the pie molding.
3. Put filling of apple mixture inside the "pie cup"
4. cover the top with the dough, make it like basket (in picture) brush with egg yolk
5. Oven for 15 minutes or until golden brown.
