AYAM MASAK KECAP / Indonesian style Chicken cooked in kecap manis (sweet soy sauce)

Assalamu'alaikum....Merhaba dari Turkey.

Menu ini paling sering disajikan oleh Ibuk saya di rumah. Pokoknya selalu ada giliran kalau gak telur masak kecap, telur masak petis, ayam masak petis atau ayam masak kecap ini.
Tapi yang paling sering kena "giliran" ya ayam kecap ini. Mungkin karena praktis masaknya, terus murah (dibanding daging-dagingan) juga seluruh anggota rumah pasti doyan.

Beda kalau pas Ibuk masak sayur, salah satu adik saya pasti dikit makannya. Atau pas masak seafood, mas saya juga dikit ambilnya. Yang paling "gak nolak" semua makanan ya saya ini...hehehehe... Saya nggak cerewet dan doyan semua! (^,^)

Sekarang, pas sudah rumah tangga sendiri ternyata ayam masak kecap ini juga lumayan sering saya bikin~walau tetap ada menu ala Turki buat suami saya. Anak saya suka asal tidak pedas. Jadi kadang saya pisahin dikit buat dia yang ggak pedas, sisanya saya kasih irisan cabe rawit dan tambahin merica hitamnya biar nendang makannya (^,^)
Bagi yang gak terlalu suka pedas, cabe rawitnya diutuhin saja atau pakai irisan cawe keriting saja. Namanya masakan rumahan, sesuai selera masing-masing saja ya.

Resep rumahan juga selalu gunakan takaran kira-kira. Tapi bumbu intinya ya tetap, rasa manis/ gurih/ pedas sesuaikan selera keluarga ya.

Bahan-bahan :
  • 1½ kg ayam utuh dipotong 15 bagian atau boleh lebih kecil, kali ini saya gunakan sayap dan paha ayam saja.
  • ½ bagian jeruk limau/ lemon, ambil airnya
  • 1 sdt garam 
  • 1 sdt merica bubuk (saya gunakan merica bubuk hitam)
  • secukupnya minyak goreng untuk menggoreng ayam 
Bumbu tumis:

  • Beberapa biji cabe rawit, diiris atau dibiarkan utuh
  • 4~5 sdm kecap manis 
  • 1 sdt kecap asin 
  • 1 sdm saus tiram (optional, kadang saya pakai kadang juga tidak)
  • 1 sdt garam atau sesuai selera
  • 2 sdt bubuk merica (saya gunakan merica hitam), tambahi sesuai selera pedasnya
  • 1 batang daun bawang bagian putihnya saja, iris tipis memanjang (optional)

Bumbu Halus:
  • 5~6 cabe merah besar (± 150 gr)
  • 5 siung bawang merah 
  • 5 siung bawang putih 
  • 2 butir kemiri
  • ± 4 sdm minyak goreng untuk menumis
Cara memasak :
  1. Lumuri ayam dengan perasan jeruk limau/ lemon, garam, dan merica bubuk. Lalu diamkan dalam lemari es ±30 menit. 
  2. Panaskan secukupnya minyak dengan api sedang~besar. Goreng potongan ayam sampai berkulit sebentar saja sambil dibalik-balik. Menggoreng ayamnya tidak perlu sampai lama, cukup permukaannya kering saja.
  3. Kurangi minyak untuk menggoreng ayam tadi dan sisakan sekitar 4 sdm saja. Tumis bumbu halus dan cabe rawit hingga harum. Tambahkan ayam goreng. Aduk rata.
  4. Masukkan kecap manis, kecap asin, saus tiram (jika pakai), garam, dan merica bubuk. Aduk rata. Tuangi air ± 1 gelas . Masak sampai bumbu meresap dan ayam matang sepenuhnya. Cicipi rasanya.
  5.  Tambahkan potongan daun bawang, aduk rata dan matikan api.
Nikmati dengan irisan mentimun/ tomat. Selamat mencoba.

Ayam masak kecap literally means Chicken cooked in sweet soy sauce (kecap manis). This meal was very much repeatable menu from my Mom in our family. Most repeatable because every family member love it so much and it's cheap protein source for our family compare to meat.

Fish and sea food also pretty much cheap in my homeland, but not all family member big fan of fish~like my elder brother. That's why this Ayam Masak Kecap become everybody's fave.

And now my kid surprisingly likes this meal, but of course I reduce spicy-ness for her. I took some portion for her for less spiciness then for me I add some birds eye chili as my own prefer. You could reduce the amount of chili for less spicy or use seedless sliced red chilies.

The recipe below is approximately my mom's style with great balance of sweetness, spiciness and the savory. Follow exact amount of spices to get real authentic Indonesian taste, or reduce/ add some flavor according to your taste.

Ingredients :

  • 1½ kg whole chicken, cut into 15 part or smaller,but fell free use some part like tighs and wings
  • freshly squeeze from ½ lemon 
  • 1 tsp salt
  • 1 tsp black pepper powder
  • enough cooking oil for fry the chicken
Spices for saute:

  • Some birds eye chili (whole or sliced), you can use sliced red chili pepper for less spicy
  • 4~5 tbsp kecap manis /Indonesian sweet soy sauce
  • 1 tsp soy sauce 
  • 1 tbsp oyster sauce (optional)
  • 1 tsp salt or to taste
  • 2 tsp black pepper powder and more for more spicy
  • 1 spring onion, white part only, roughly chopped (optional)

Spices to blended: (use pestle and mortar or hand blender)
  • 5~6 red chili pepper, seeded (± 150 gr)
  • 5 shallots 
  • 5 cloves of garlic
  • 2 pcs candlenuts
  • ± 4 tbsp oil for sauteing
How to cook :
  1. Toss chicken with lemon juice, salt and pepper. Let it sit ±30 minutes.
  2. Heat enough cooking oil in a wok/ frying pan. Fry the chicken with medium~high heat just until the skin brown and dry enough, no need to cook thoroughly.
  3. In same wok/ frying pan, take that same oil you use for fried the chicken and leave it ±4 tbsp. Saute the spice puree together with birds eye chili/ sliced red chili pepper until it aromatic and looks oily. Stir in fried chicken and toss well.
  4. Add in kecap manis (sweet soy sauce), soy sauce, oyster sauce (if using), salt and black pepper powder. Stir to combine. Add in ± 1 cup of water, toss well. Cook until chicken mingle well with the spices and Cooked thoroughly. You may add a little amount of water if chicken not yet done. Cook with lid on until water absorbed a bit. 
  5. Check the taste, you may add some salt or sugar or black pepper powder as your prefer.
  6.  Just before you turn off the heat, mix in chopped spring onion.
Enjoy warm with white rice and some cucumber and tomato slices.
